Perfect for after a morning gym routine:

Chia Seed Pudding

I make this is the morning and leave it in my gym bag and its prepared once

 I’ve finished my gym session!!

INGREDIENTS

  • 30g chia seeds
  • 1 tbsp oats
  • 250ml nut milk of choice (hazelnut/ almond are my favourite)
  • 2 tbsp cacao powder
  • 2 tbsp almonds
  • Berries * optional

DIRECTIONS

  1. Add the chia seeds, oats and cacao powder to a container or bowl.
  2. Add the milk and stir well for 30 seconds to prevent the chia seeds clumping together.
  3. Place in the fridge for minimum of 1 hour or prep the night before and leave overnight in the fridge.
  4. Top with almonds & your favourite berries.
  5. For extra protein feel free to add 30g of your favourite protein to the mixture when stirring with the milk.

To enjoy at lunch or dinner:

Prawn Curry

  • 2 courgettes
  • 1 red pepper
  • 2 tbsp curry paste
  • 2 cloves garlic- minced/ finely chopped
  • 1 red chilli, seeded and thinly sliced
  • 2 tsp peeled and minced ginger
  • 1 tin (400ml) coconut milk
  • Juice of 1 lime
  • 2 tbsp fish sauce
  • 1 packet of prawns approx. 200g
  • ½ head of cauliflower/ broccoli

DIRECTIONS

  1. Dice the courgette and cut the pepper into thin strips.
  2. Gently fry the ginger, chilli and garlic with the curry paste for 2 minutes.
  3. Add the coconut milk, lime juice and fish sauce.  Stir and bring to the boil.
  4. Simmer for 15 minutes.
  5. Add the courgette and red pepper. Keep on medium heat for 10 minutes.
  6. Add the prawns for the last 3-4 minutes of cooking.
  7. Meanwhile, cut the cauliflower/ broccoli into florets. Steam for 6 minutes.
  8. Serve the curry with the florets. Garnish with coriander.

Lamb Kebabs

MARINADE

  • 2 tbsp chopped parsley
  • 2 tbsp olive oil
  • Juice of ½ lime
  • 1 clove garlic- minced/ finely chopped
  • Salt
  • Pepper

LAMB SKEWERS

  • 800g of lamb, cut into chunks
  • 1 red pepper, sliced
  • 1 courgette, sliced
  • 1 onion, sliced

SALAD

  • ½ Lettuce
  • ¼ cucumber, chopped
  • 1 bunch coriander, leaves chopped
  • 2 spring onions, chopped
  • 3 tbsp cashew nuts
  • 2 tbsp sunflower seeds
  • 2 tbsp olive oil

DIRECTIONS

  1. Mix all the marinade ingredients and mix with the lamb, pepper, courgette and onion in a bowl. Marinate overnight.
  2. Place on skewers, BBQ or griddle for 8 minutes turning every 2 minutes.
  3. Chop the lettuce and mix with the cucumber, coriander and spring onions.
  4. Serve together, garnish with nuts, seeds and olive oil.
