Perfect for after a morning gym routine:
Chia Seed Pudding
I make this is the morning and leave it in my gym bag and its prepared once
I’ve finished my gym session!!
INGREDIENTS
- 30g chia seeds
- 1 tbsp oats
- 250ml nut milk of choice (hazelnut/ almond are my favourite)
- 2 tbsp cacao powder
- 2 tbsp almonds
- Berries * optional
DIRECTIONS
- Add the chia seeds, oats and cacao powder to a container or bowl.
- Add the milk and stir well for 30 seconds to prevent the chia seeds clumping together.
- Place in the fridge for minimum of 1 hour or prep the night before and leave overnight in the fridge.
- Top with almonds & your favourite berries.
- For extra protein feel free to add 30g of your favourite protein to the mixture when stirring with the milk.
To enjoy at lunch or dinner:
Prawn Curry
- 2 courgettes
- 1 red pepper
- 2 tbsp curry paste
- 2 cloves garlic- minced/ finely chopped
- 1 red chilli, seeded and thinly sliced
- 2 tsp peeled and minced ginger
- 1 tin (400ml) coconut milk
- Juice of 1 lime
- 2 tbsp fish sauce
- 1 packet of prawns approx. 200g
- ½ head of cauliflower/ broccoli
DIRECTIONS
- Dice the courgette and cut the pepper into thin strips.
- Gently fry the ginger, chilli and garlic with the curry paste for 2 minutes.
- Add the coconut milk, lime juice and fish sauce. Stir and bring to the boil.
- Simmer for 15 minutes.
- Add the courgette and red pepper. Keep on medium heat for 10 minutes.
- Add the prawns for the last 3-4 minutes of cooking.
- Meanwhile, cut the cauliflower/ broccoli into florets. Steam for 6 minutes.
- Serve the curry with the florets. Garnish with coriander.
Lamb Kebabs
MARINADE
- 2 tbsp chopped parsley
- 2 tbsp olive oil
- Juice of ½ lime
- 1 clove garlic- minced/ finely chopped
- Salt
- Pepper
LAMB SKEWERS
- 800g of lamb, cut into chunks
- 1 red pepper, sliced
- 1 courgette, sliced
- 1 onion, sliced
SALAD
- ½ Lettuce
- ¼ cucumber, chopped
- 1 bunch coriander, leaves chopped
- 2 spring onions, chopped
- 3 tbsp cashew nuts
- 2 tbsp sunflower seeds
- 2 tbsp olive oil
DIRECTIONS
- Mix all the marinade ingredients and mix with the lamb, pepper, courgette and onion in a bowl. Marinate overnight.
- Place on skewers, BBQ or griddle for 8 minutes turning every 2 minutes.
- Chop the lettuce and mix with the cucumber, coriander and spring onions.
- Serve together, garnish with nuts, seeds and olive oil.
* Lamb can be swapped for chicken, salmon or halloumi.
